Salmon & Asparagus Pasta Bake

Our Salmon & Asparagus Pasta Bake is a family favourite and very easy to prepare. Perfect for a mid week meal this recipe makes 4 portions.


  • 400g skinned salmon fillet (inch cubes)
  • 185g bunch of asparagus (chopped in inch lengths)
  • 300ml double cream
  • 100ml white wine
  • 500g cooked penne pasta
  • 2 tsp wholegrain mustard
  • 2 garlic cloves (finely diced)
  • 2 banana shallots (finely diced)
  • 100g grated mozzarella
  • 15g chopped parsley
  • ½ lemon
  • Cooking oil or knob of butter
  • Salt and pepper for seasoning


  • Place a large saucepan on medium heat. Add oil, shallot and garlic and begin to soften.
  • When turning brown, add the mustard, the wine and squeeze in the lemon.
  • Once the liquid has nearly all evaporated, add in the cubed salmon and asparagus.
  • Gently stir until all the liquid has evaporated. Add the cream, 40g of mozzarella and half of the chopped parsley. Season this and bring up to a light simmer.
  • Gently fold through your cooked pasta until thoroughly coated in sauce.
  • Transfer to an oven dish, top with the remaining cheese and parsley and seasoning to taste.
  • Bake in the oven at 180°C for 15 minutes.
